Namaste and a warm welcome to all.

As you can see my blog is about food and recipes. I love eating and trying out new recipes all the time.

Very often we mum's think of healthy and interesting food options that we can make for our kids especially when they are back from school knowing that their lunch boxes never come back home empty. Hence I always feel its important to give them a healthy and wholesome snack once they are home. When my kid comes home from school I always try and give him some source of carbohydrate combined with proteins along with this, a fruit and milk, or puddings made from milk. Kids normally can't eat too much at one time, so the portions can be small but giving them a little from each of these food group ensures a balanced meal.

I have some interesting ideas that I'd like to share with you all. You might find some of my recipes very basic but I am hoping that my blog is helpful not only for Indians but for people all around the world! Indian food is quite popular and enjoyed by most, so hopefully you can attempt recipes from here and make it yourself now, in your kitchen. Chicken Afritada.

Chicken Afritada is a tomato based Filipino chicken curry. It has a nice red color because of the tomato powder (Afritada ready mix) used in it. If you are not able to get the Afritada powder, don't worry you can still make this curry by just using tomato puree instead.
Ingredients:
400-500 gm Boneless diced chicken

3-4 cloves of crushed and finely chopped garlic.

15-20 black peppercorns.

1 tbsp of tomato puree (if you have the afritada mix) and 3-4 tbsp tomato puree (if you do not add the afridata mix).
1 Potato (diced into squares).

1 medium onion (diced into squares).

Afritada mix packet.

1 tbspn light soy sauce.
Pinch of sugar.
Method:
Wash the diced chicken well, drain all the excess water and marinate with some freshly crushed black pepper.

Add a pinch of sugar (only a pinch) in the chicken.

Add the soy sauce, stir well and keep for half an hour to let the chicken marinate.

Crush the black pepper and keep aside.
Open the Afritada packet and mix the contents with 1 small cup of water. Keep aside.

Heat oil.

Once the oil becomes hot add garlic and chopped onions.

Stir and cook on a medium flame for about 4-5 minutes. Add chopped potatoes.
Stir the potatoes and onions well. Now add the diced chicken.

Stir and add the crushed pepper. Mix well.

Add the afritada and water mixture and stir well.
Add tomato puree.

Stir well. You may want to add a little water (around 1/2 to 1 cup of water) to adjust the consistency to your preference.

Lower the flame, cover with a lid and allow to cook for about 10 to 12 minutes.

Open the lid, stir once and pierce a knife through a piece of potato to see if its cooked or not.

If the potato is still hard, cover again and let it cook some more time on a low flame and check again. When the potato is soft it is ready to be served.

Serve hot with rice. Soy sauce and the Afritada mix already contain some salt hence taste the curry and then add salt if you need to. You may also want to add some red chilly flakes to make it spicy.

Although I have seen many blogs on recipes, I have to say that yours is by far the best I have seen. Keep up the good work.
