Namaste and a warm welcome to all.

As you can see my blog is about food and recipes. I love eating and trying out new recipes all the time.

Very often we mum's think of healthy and interesting food options that we can make for our kids especially when they are back from school knowing that their lunch boxes never come back home empty. Hence I always feel its important to give them a healthy and wholesome snack once they are home. When my kid comes home from school I always try and give him some source of carbohydrate combined with proteins along with this, a fruit and milk, or puddings made from milk. Kids normally can't eat too much at one time, so the portions can be small but giving them a little from each of these food group ensures a balanced meal.

I have some interesting ideas that I'd like to share with you all. You might find some of my recipes very basic but I am hoping that my blog is helpful not only for Indians but for people all around the world! Indian food is quite popular and enjoyed by most, so hopefully you can attempt recipes from here and make it yourself now, in your kitchen. Paneer Burji

INGREDIENTS:
1 cup crumbled cottage cheese (paneer).
1 tspn grated garlic.
1 tspn grated ginger.
3/4 cup finely chopped onions.
2 green chillies.
3/4 cup finely chopped tomatoes.
Salt as per taste.
1 Tbspn oil.


1/2 cup capsicum (chopped into medium squares). This is optional. You can make this dish without the capsicum (follow the steps in the same order even if you do not add capsicum).


1/2 tspn cumin
1/4 turmeric powder
2 tspn coriander powder
1 tspn red chilly powder
3/4 tspn garam masala

METHOD:
Heat oil. Once it becomes hot add cumin.


Add grated ginger and garlic. Let them sizzle (Do not make them brown).


Add onions, green chillies and stir well.


Stir fry on a medium flame and cook till the onions are brown. Once the onions become brown add tomatoes.


Add salt.


Add turmeric powder, stir well cooking on a medium flame.


Smash the tomatoes with the back of a spoon and cook further till they become soft.


Add capsicum.


And stir well.


Cover with a lid. Allow to cook on a low flame.


Open, stir and check after about 3-4 minutes. You may want to sprinkle little water with your hand to make sure nothing is sticking to the bottom or getting burnt. The capsicum should be soft by now.


Add the cottage cheese crumbling it with your hand.



Stir well and add coriander powder.


Add red chilly powder.


And garam masala


Panner Burji is ready. Garnish with freshly chopped coriander and serve hot with Paratha or Roti.
